Abstract

Berries are the best known source of antioxidant substances. The diversity and prevalence of berry raw materials allows us to consider it as the main supplier of a number of biologically active antioxidant substances, most of which are polyphenols and vitamins. The purpose of this work was to assess the antioxidant status of fruit and berry raw materials growing in Siberia in order to clarify data on the content of the main groups of compounds with antiradical activity. The choice of raw materials was based on its availability and prevalence for the population of the Tomsk, Kemerovo, Novosibirsk regions. Berries and fruits traditional for Siberia, widely used both in households and at enterprises of the processing industry and public catering, were subjected to research: Cranberry (lat. Oxycóccus), Lingonberry (lat. Vaccínium vítis-idaéa), Blueberry (lat. Vaccínium myrtíllus), Red currant (lat. Ríbes rúbrum), Black currant (lat. Ríbes nígrum), Chokeberry (lat. Arónia melanocárpa), Rosehip (lat. Rosa majalis Herrm), Cherry (lat. Prunus fruticosa). According the total indicators blackcurrant, cranberry, and chokeberry have the highest antioxidant potential. At the same time, all fruit and berry raw materials studied in the course of work can be attributed to the main sources of antioxidant biologically active substances in the diet of the population.
