Abstract
Food and drink are basic necessities of human life. People have probably tried to maintain in-stinctively, through coincidence and by heuristic approaches, from the beginning of the prehistoric era, the need for food protection and preservation, in order to prevent the deterioration of food collected from nature. In some works on food and nutrition, ancient food preservation methods are briefly mentioned. In this study, the preservation of food in antiquity is examined through the modern and ancient literature and from archaeological and epigraphic evidence. In the Prehistoric Period people were totally dependent on nature for food, increased the amount of food and drink and variety in the amount they obtained from raw materials over time. In this period, people hunted many animals and at the same time collected from nature products such as fruits, plants and spices. Since knowledge of how to protect food in the beginning was unknown, they had to consume food as soon as possible. However, the protection methods devised over time in other regions were communicated over time. It is also noteworthy that some of the methods employed for food protection today conflict with the doctrine and practice in Antiquity. In ancient times, methods such as salting, drying, smoking, fermentation, soaking in brine and the addition of sugar were employed.
