Abstract

Cheonggukjang (CGJ), a traditional Korean fermented soybean food, exerts immunomodulatory effects.Cells were fixed and stained with Oil Red O to assess lipid accumulation. Total lipid and triglyceride contents increased during the cell differentiation.In this study, the antioxidantactivities of Chungkugjangwere evaluated using in vitro system including DPPH, ABTS, and ORAC methods.Total phenolic contents of Chungkugjang extract were 13.87 μg trolox equivalent/mg extract and EC50 of Chungkugjang r extract for ABTS radicalswere 13.8 μmole ascorbic acid equivalent/g raw sample. Triacylglycerolcontent in 3T3‐L1 preadipocyte cells treated with 25, 50, and 100 μg/mL Chungkugjangextract decreased significantly (p<0.05) compared tothose in untreated cells. Leptincontent in 3T3‐L1 preadipocyte cells treated with Chungkugjangextract decreased significantly (p<0.05) and adiponectin content increased compared tothose in untreated cells. Also, Chungkugjang extract induced the down‐regulation of adipogenesis‐related genes such as PPARγ, GDP1 and FAS. The Chungkugjang extract showedphenolic compounds with antioxidant ability and had in vitro decrement of triglyceride accumulation on 3T3‐L1 adipocyte cells.
