Abstract
The objective of this work was to analyze the quality of informal milk commercialized in the city of Mossoro, RN, by means of physical-chemical analysis and research of fraud. Samples of raw milk commercialized in four neighborhoods of Mossoro were collected during the months of March and April of 2006. The collection took place weekly, totaling 32 samples. The samples went through physical-chemical analysis (density, fat content, total dry extract, solids-non-fat, grade of Dornic acidity, proof of alcohol and freezing point) and research of frauds, such as: addition of water, of conservatives ( hydrogen peroxide, caustic soda, sodium bicarbonate, potassium bicarbonate) and restorative (sucrose, starch, chloride). From all the analyzed samples, 50% failed at least one of the physical-chemical tests, by not meeting the standards of current legislation. 50% of the samples did not meet the freezing point standard, followed by ESD (40.6%), EST (21.9%), density (18.8%) and acidity (6.2%). None of the samples met the standard of alcohol proof. From the fraud analysis the addition of water was are only one found. Most of the milk showed irregularities being unfit for marketing. SILVA et al (2009), em avaliação da influência do transporte a granel na qualidade do leite cru refrigerado no Sudoeste Goiano, durante os períodos chuvoso e seco, obtiveram médias do extrato seco total (EST) de 12,49 e 12,52, respectivamente, estando estas também fora do estabelecido pela legislação

Valores do ESD das amostras de leite coletadas nos quatro bairros analisados no município de Mossoró, durante o período de março e abril de 2006. Avaliando os valores do ESD (Gráfico 1) nos quatro bairros, observou-se que 40,6% estavam fora dos parâmetros (ESD mínimo de 8,4), resultado semelhante ao observado por SOUSA et al (2003), em seu trabalho com leite in natura na cidade de Patos, PB, onde o ESD se apresentou 46,6% fora do padrão. Isso levaria a suspeitar da adição de água, caso todos os valores da densidade nas amostras de leite deste bairro estivessem abaixo de 1,028, o que não foi observado. Valores da gordura das amostras de leite coletadas nos quatro bairros analisados do município de Mossoró, durante o período de março e abril de 2006.
