Abstract

Monitoring of the organization of school meals at the federal, regional and municipal levels showed that the quality of hot meals does not meet the current requirements in all constituents of the Russian Federation. Hot meals are intended for schoolchildren, so it is important to receive information about the quality of school meals from them. An organoleptic analysis is a variant of the rapid assessment of the quality of dishes. The results of the survey of students in the Voronezh Region on the quality of school meals are presented. The students and their parents rated breakfast and lunch on a 5-point scale. The level of schoolchildren’s satisfaction with hot meals was 86.5% in the Voronezh Region. Schoolchildren in the Voronezh Region prefer mashed potatoes with cutlets, pasta, borscht, milk porridge, pilaf, and baked cottage cheese pudding as school meals.
