Abstract

The purpose of this study was to clarify the actual status of game meat consumption and consumption intentions in urban restaurants, and to examine measures to increase consumption. The implications of the analysis are as follows. 1.Game meat served at casual restaurants tend to be a low evaluation. Cooking techniques and menu development will be important. 2. Potential consumers are consumers with a strong desire to explore food and a strong sense of meat-loving, but at present, concerns about sanitation are having a negative impact on the expansion of consumption. Therefore, providing information from restaurants to consumers about safety between is important.
