Abstract
SummaryOne comb of a hive was found to contain an olive-green honey while the surrounding frames contained ordinary (brownish-orange) honey. The constituents of the green and ordinary honeys respectively were: moisture 17·4, 18·4%; glucose 32·9, 32·3%; fructose 38·9, 40·6%; sucrose 0·2, 0·64%; dextrin 2·9, 1·6%; ash 0·32, 0·17%; nitrogen 0·092, 0·80%. The amino-acid content of both honeys is described. The green colour was due to the common food colourant, 44090 green S. Its source is discussed.
