Abstract

An amperometric enzyme electrode for the determination of aspartame in protein-free samples has been constructed. It is based on the coimmobilization of an aspartame-hydrolyzing enzyme, aspartate aminotransferase, and glutamate oxidase on an Immobilon membrane. The electrode response is linear from 2.0 × 10−4M to 1.5 × 10−3M with a current slope of 2.1 nA/mM. The electrode was used to successfully measure aspartame in some dietary products.
