Abstract

The effect of different agroresidues, used for solid-state cultivation of Pleurotus sajor-caju, on amino acid composition of the fruit bodies of the mushroom was investigated. The amino acid spectrum varied with the nature of the substrate used for cultivation but cysteine was found to be the most limiting essential amino acid in all cases. The second limiting amino acid was isoleucine; the third limiting amino acid was either phenylalanine, trytophan or valine, depending on the substrate. Biological value and essential amino acid index were found to varyffrom 31 to 67 and 39 to 72, respectively.
