Abstract

The current and future potential role of ambient mass spectrometry (AMS) in the fields of recently created discipline of foodomics is discussed. The main focus was set on the literature published between 2014 and 2018, although a few earlier papers of special interest have been included. Several examples for the successful application of AMS techniques including direct analysis in real time (DART), desorption electrospray ionization (DESI), easy ambient sonic spray ionization mass spectrometry (EASI-MS) and paper spray mass spectrometry (PS-MS) are presented.
