Abstract

ABSTRACTMost α - amylases produced by genus Bacillus display a high activity in a rather wide interval of pH and at high temperatures, this determining their great industrial importance. Having in mind the statement above, the present review attempts at summing up the investigation data concerning the enzyme producers, growth culture conditions providing an optimal synthesis, the regulation of α - amylase synthesis (the role of catabolite repression, cyclic and highly phosphorylated nucleotides and mRNA stability, in particular) as well as some characteristics of the enzyme (pH- and temperature optimum, pH- and thermostability, molecular mass and products obtained by starch hydrolysis).
