Abstract

The removal of yeast cell debris following high-pressure homogenization was studied using compounds that selectively cross-link carbohydrate-containing species. Borax (sodium tetraborate) and sodium monoborate were found to aggregate cell debris particles and enable the clarification of a yeast homogenate using only low speed centrifugation. Soluble protein shows only slight aggregation and remains in the supernatant in high yield.
