Abstract

The term active packaging (AP) refers to the package’s ability to interact with its contents and/or the surrounding environment to provide a modified atmosphere package (MAP) required for maintaining the quality of food products. In this book chapter, different AP systems are discussed under two main sections: active-releasing systems (emitters), including antioxidant releasers and carbon dioxide emitters; and active scavenging systems (absorbers), including oxygen scavengers (OS), ethylene scavengers, and ethylene absorbers. The benefits of AP required for increasing commercial realization of these packaging technologies are also discussed along with the various developments in the active food packaging sector to facilitate the delivery of safe and high-quality food products.
