Abstract

aims: To study the molecular interactions between artificial sweetener and edible acid background: Ultrasonics, Material Science objective: To determine the molecular interactions between artificial sweetener and edible acids using acoustical parameters method: Acoustical parameters, spectroscopy and stability constant result: The molecular interactions and functional groups that are present is found conclusion: As the concentration increases, acoustical parameters like ultrasonic velocity, viscosity, density, Relaxation time, acoustic impedance while, other acoustical parameters like adiabatic compressibility and intermolecular free length decreases with the increases with concentration.
