Abstract

Objectives: To establish the score system of simple food questionnaires for exceeding salt standard in China and confirm the cut-point of exceeding salt standard in simple food questionnaires Methods: 24-h urinary salt excretion (24hUSE) were measured with biochemical ion method in 324 persons as the gold index of exceeding salt standard (urinary salt excretion ≥ 100 mmol/d, salt intake ≥ 6 g/d), in order to evaluate the accuracy of score of exceeding salt standard in Japanese simple food questionnaires (JSFQ). Then the model of exceeding salt standard in Chinese simple food questionnaires (CSFQ) was established. Specificity and sensitivity of CSFQ were verified in hypertensive patients with exceeding salt standard using the ROC curve (AUC) and Youden index Results: Mean 24hUSE was 154.68 mmol/d, which was equal to salt intake 9.28 g/d and 11.30 salt-scored with JSFQ. Mean BP was 139.34 ± 20.1/85.8 ± 16.3mmHg. The measured values of 24hUSE were 123, 161, 174 and 218mmol/d, which was equal to low (0–8 points), medium (9–13 points), high (14–19 points) and very high ( > 20 points) of JSFQ scores, respectively. With 24hUSE ≥ 100mmol/d as the scores of exceeding salt standard, the specificities and sensitivities of Japanese score, Chinese Model 1 and Model 2 (adjusted region, hospital and blood pressure) of ROC curve were 0.57, 0.83 and 0.89, respectively. Confirmed with Youden index, the sensitivities of Japanese score, Chinese Model 1 and Model 2 were 55.6, 69.5 and 69.9, and the specificities were 59.6, 67.0 and 69.6, respectively. The confirmed cut-point of exceeding salt standard in CSFQ was ≥ 6.5 Conclusion: The score standard of exceeding salt standard in JSFQ was not suitable for Chinese people. Model 2 was the most related food questionnaires with 24hUSE. The score of exceeding salt standard in Improved CSFQ was ≥ 6.5
