Abstract

One very rewarding experience for a hospitality educator is to see the reactions on students' faces as they enter Chicago's McCormick Center for their first day of the National Restaurant Association Show. With an abundance of exhibitors and educational sessions this is not only a “must attend” experience for culinarians and restaurateurs; it is also the ideal location to enhance hospitality students' educational background through self-directed learning. Based on a selection theoretical learning models, a course for academic credit was designed so that hospitality students were able to customize their learning objectives to meet personal goals and to present their knowledge through portfolios.
