Abstract

This research aims to develop a small pasteurization system that applies magnetic induction heating to preserve fresh coconut drink. Magnetic induction heating has many advantages, such as no flame, high heating efficiency, low energy consumption, etc. Therefore, it can be applied to a pasteurization system. In the heating section, a 316L stainless steel pipe (food grade) covered with an induction coil is used as a main product line. This main product line has an inside screw pump in order to create a turbulent flow, which increases heat distribution and can be used for viscous fluids. An adjustable magnetic induction system is applied to the induction coil and induces the main product line in the heating process. In this experiment, 1200W, 1600W and 2000W of induction power are supplied to heat 6 liters of coconut juice, which is used for this case study, from room temperature (approximately 25° C) to 90° C. The results show that at 1200W, 1600W and 2000W, the heating times are 66 minutes, 64 minutes and 32 minutes respectively.
