Abstract

A system has been developed which permits a rapid and highly reproducible quantification of highly volatile components. Volatiles, entrained in a stream of nitrogen, were carried through a desiccant and adsorbed on a cooled section of gas chromatographic column, packed with Poropak Q. The column was then transferred to a gas chromatograph and the volatiles separated. From tomato pulp and juices reconstituted from pastes, five compounds were collected, quantified and identified by gas chromatography-mass spectrometry. The reproducibility of the technique is discussed.
