Abstract

Food safety is a challenge not only faced by a single firm but the whole food supply chain. Traditionally, food supply chain is simply recognized as a system. Instead, it is a complex adaptive system (CAS). In this paper, we investigate the complex adaptive features of food supply chain, and propose four main food safety influencing factors: environment sanitation, safety awareness, information sharing and technology level. Then based on CAS, a quantitative model for safety evaluation of food supply chain is set up. This paper helps us to better understand the problems and phenomena in food supply chain.
