Abstract

Thiamine-binding protein in brown rice was found to be a globulin which releases thiamine during germination, and the vitamin was subsequently phosphorylated by thiamine pyrophosphokinase. A possible functional role of rice seed thiamine-binding protein as stores of amino acids and thiamine which are required for the germination is discussed.
