In the face of racial hostility and discrimination, Chinese immigrant restaurateurs and community leaders in San Francisco, in addition to satisfying the appetites and social needs of their fellow immigrants, employed a variety of strategies to draw a desirable class of white patrons and, at the same time, to win tolerance and acceptance.
