Abstract

Carnosine (-alanyl-L-histidine) and anserine (-alanyl-3-methylhistidine) are rich in black-boned chicken. Both are bioactive dipeptides that have an excellent role in preventing brain aging-related conditions such as Alzheimer’s disease and fighting against cancer and diabetes. Thus, carnosine- and anserine- rich black-boned chicken is commonly consumed as Chinese medicinal diet. However, both carnosine and anserine are degraded by serum carnosinase 1 (CN1) before the utilization. Protecting the loss of carnosine and anserine can maximize the nutritional benefits.
