Abstract

The violet red bile agar plate count method (VRB) for coliforms was compared to the five tube most probable number method (MPN) on 103 samples of cheese. It was confirmed that the MPN method is more sensitive to low counts than the VRB method. However, in cheese where the critical level is well above zero the VRB method was shown to be reliable and less expensive to perform. The V.R.B. method is recommended for coliform quality control of cheese.
