Abstract
A colorimetric fluorescent probe for the detection of tyrosinase was developed. The quantitative range of tyrosinase activity detection was 0–10 U/mL and the LOD was 0.23 U/mL. In addition, the light yellow of the probe solution gradually turned to bright yellow with the increase of tyrosinase activity. In addition, the G and R pixel values of photos of the solutions had linear relationships with the tyrosinase activity. The probe successfully quantified the tyrosinase activity in real food samples. This research shows that this method could allow for the semi-quantitative detection of tyrosinase by smartphones, without the need for any further equipment.
