Abstract

Consumers demand healthier food products that are free of synthetic chemical additives when possible. For that reason, researchers have been studying numerous plant extracts and spices as natural and safe options to replace synthetic antioxidants. Tea extracts and catechins are promising for this purpose due to their abundance and low cost. In addition, they possess antimicrobial properties and beneficial health effects. More recently, teas and tea extracts have been used in various industrial products such as cosmetics, foods, and beverages. In this chapter, studies on the application of tea extracts in meat, oil/fat, dairy, and other foods as antioxidant additives have been reviewed. Research has shown that the use of green tea extracts can improve the quality and shelf life of various food products. They can be added directly into foods or included in food packaging.
