Abstract

Heat treatment by superheated steam has been utilized in several fields as typified by cooking. Recently many home small cookware which used superheated steam for food heating is put on the market. Generation of superheated steam has almost two-step heating "the liquid phase and the gaseous phase". However, the two-step heating can't make steam quickly, and its thermal efficiency is also bad. Okuyama and Mori(2007) introduced method of rapid vaporization at room temperature, with power saving. The present paper is to cause more rapid evaporation by pore surface of porous material using making a heater toward a water-containing porous material, and to more generate superheated steam. We manufactured experimental devices, to make superheated steam quickly and high efficiency.
