Abstract
Carotenoids from different food sources particularly fruits and vegetables are an important contributor to a healthy diet. These compounds have been associated with the reduced risks of several diseases such as cancer, cataracts, and macular degradations. Due to their multiple health prospects, carotenoids gain significant interest in the pharmaceutical and food industries. The composition and bioavailability of the carotenoids in food are significantly influenced by the method of extraction used. The application of “green technology” in food processing has received great attention worldwide as it is safer for the consumer as well as environmentally friendly. This chapter discusses the use of greener solvents in the extraction of carotenoids as a new alternative technique for the pharmaceutical and nutraceutical applications. The advantages of applying the greener solvents including ionic liquids over the conventional solvents in the extraction of carotenoids are discussed in detail.
