Publisher Summary This chapter describes the enzymatic preparation of pyridoxine 4'- and 5'- α -D-glucosides. A number of glycosidic derivatives of pyridoxine (PN) are described. Some of these compounds are obtained as pyridoxine 5'- α -glucoside together with a small amount of pyridoxine 4'- α -glucoside from the culture filtrate of Sarcina lutea, which is grown on a medium containing sucrose and PN. The yield of PN α -glucosides is low. The strains of Sarcina having PN glucoside-forming activity produce a remarkable amount of riboflavin α -glucoside in the culture filtrate, when they are grown on a medium containing sucrose and riboflavin. Also, the formation of PN glycoside-like compounds is observed with partially purified α -glucosidase preparations from Aspergillus niger and Mucor javanicus ( M. javanicus ), and with a crystalline β -galactosidase from Escherichia coil having the riboflavin glycoside-forming activity. A crystalline α -glucosidase from M. javanicus and a homogeneously purified preparation of α -glucosidase from pig liver, both having high riboflavin α -glucoside-forming activities, catalyze a transglucosylation reaction from maltose to PN.
