Abstract

Bacillus cereus is an opportunistic pathogen known to cause gastrointestinal disorders and severe local or systemic infections. Contamination of raw, cooked, and processed foods by B. cereus causes various foodborne illnesses. Pathogenicity of B. cereus is mainly due to the secretion of various toxins and enzymes, which is affected by various environmental factors. Hence, care needs to be taken to prevent outgrowth and toxin production of B. cereus in food.
