Abstract

Nanosensor technology has a great potential to significantly impact food safety monitoring by using different types of physical, chemical sensors, or even biosensors. Nanosensors based on the evanescent field effect include surface plasmon resonance (SPR) sensors (the most notable type), as well as interferometry, optical waveguide, and optical ring resonator-based sensors. As SPR sensors are discussed in another section of this book, this chapter focuses on the latter types, including reflectometric interference spectroscopy (RIfS), interferometry, optical waveguide lightmode spectroscopy (OWLS), resonant mirrors (RMs), fiber optics, total internal reflection ellipsometry (TIRE), and total internal reflection fluorescence (TIRF) spectroscopy. Novel nanobiosensors are presented through their applications in food safety. A wide range of nanobiosensors for the determination of different residues (eg, pharmaceuticals and pesticide residues) in environmental matrices and foods, as well as for monitoring haphazard microbial or mycotoxin contamination in cereals or other food products will be summarized.
