Abstract

Amylose was irradiated in a solid state from a Co/sup 60/ source, receiving a total dose of l0/sup 5/-10/sup 8/ r. The intrinsic viscosity and blue value of the iodine complex of the amylose specimens decreased, while the reducing sugar value increased. These results indicate that gamma -irradiated amylose molecules are degraded. Moreover, the carboxyl value and the ultraviolet and infrared absorption spectra showed that amylose molecules were oxidized by gamma -irradiation. There was a difference between gamma -irradiated starch and amylose in their mylolysis limit: the mylolysis limit of gamma - irradiated amylose with crystalline sweet potato BETA amylase was greatly decTeased, while it has been reported that the mylolysis limit of starch is increased by gamma irradiation. The BETA -amylolysis limit of gamma - irradiated amylose with bacterial crystalline alpha -amylase decreased similar to BETA -amylase. Moreover, the amylolysis limit of the gamma -irradiated amylose with saccharogenic amylases (Rh. Delemar type and Asp. niger type) was low as compared with the original amylose. This is considered to be the reason for the decrease of the amylolysis limit of the amylose specimens and shows that any structural change produced in the glucose chains by gamma -irradiation inhibits the actionmore » of the enzymes.
