Abstract

The evolution of foods in our days constitutes a major issue for the scientific community and the society. An essential field of foods is that of dairy products on which the present thesis is based. Human nourishment entails the consumption of dairy products at a high percentage; a need which led food industries to the creation of new products. Based on our historical background, the exploitation of animals for their milk started from humans and later was intensified by industries for the covering of the needs for dairy products. Their significance is due to the beneficial properties of milk. Some of the products that are found on the market are UHT milk, condensed milk, sugary milk, yoghurt with probiotics, kefir etc. The improvement of food industries in this field is evident with the creation of plant-based products as an alternative substitute of animal goods. Because of some health problems, plant-based beverages are not only an alternative solution but the replacement of dairy ones. In the present thesis are analyzed some of the plant-based beverages such as, soy milk, almond milk, rice milk, coconut milk, oat milk, peanut milk. To do that, a questionnaire was created in order to observe to what degree people consume dairy and non-dairy products as well as what health benefits the frequent or rare consumption of the aforementioned products are. Finally, it is concluded whether this development is beneficial for humans.
