Abstract

Sulfur-containing biologically active substances demonstrate pronounced antioxidant properties. Special positions among sulfur-containing antioxidant compounds belong to glutathione, cysteine, cystine, methionine, taurine and lipoic acid. The antioxidant properties of these sulfur-containing biologically active substances have been characterized and analyzed using the data of voltammetry and spectrophotometry. All the studied substances showed more or less pronounced antioxidant activity. Lipoic acid and glutathione exhibited the maximum antioxidant activity, which agrees with data published in the literature. Methionine showed a minimum antioxidant activity in the group of investigated substances. The antioxidant activity was compared on the basis of the international criterion of antioxidant properties of sulfur-containing biologically active substances - oxygen radical absorbance capacity (ORAC) with respect to a reference antioxidant (glutathione). Correlation between the results of voltammetric and spectrophotometric analysis has been found.
