Abstract

The world market of meat and meat products is the largest segment of the world food market, therefore the study of the main directions of its development and modern features is extremely important. The most popular types of meat consumed by the population are red meat (beef, mutton), white meat (mainly poultry, also pork) and seafood (fish-shellfish), the consumption of which is constantly growing in the world. At the same time, the growth of meat consumption is due to many factors, the most important of which is the continuous growth of the world population and the overall level of income. As a result of increasing the purchasing power of the population due to the growth of incomes, as a rule, the consumption of meat in the consumer diet increases, which is considered to be the richest source of calories compared to a grain-based diet. This trend of changing meat consumption due to income has traditionally been more pronounced in the case of red meat, white meat and pork, which are considered to be the most expensive foods and are mainly included in the diet of the population of middle- and high-income countries. In lowand middle-income countries, the consumption of poultry is predominant, as the latter is the cheapest compared to other types of meat. However, in the last few decades, the preference for meat has changed significantly, which does not seem to be due to the amount of income. In particular, there is a strong trend in the world for white meat, especially poultry, which is available in various countries, which cannot be attributed only to the low price of poultry. It is obvious that in this case it is due to the preference of white meat by consumers, which is perceived as a healthier, nutritious and at the same time dietary food. In addition, there are no religious, cultural or other restrictions on the consumption of poultry, as is the case, for example, with pork in Muslim countries. Since there are no restrictions on the consumption of other types of meat in the Republic of Armenia in religious, cultural, traditional or other respects, all types of meat are consumed equally. Nevertheless, structural changes in world meat consumption have been reflected in our country as well. Poultry has provided the highest growth rates in recent years in terms of meat consumption.
