Abstract

The present invention relates to lactic acid bacteria isolated from kimchi which produces bacteriocin having an antibacterial activity against Streptococcus mutans causing dental caries and, more specifically, to lactobacillus sakei CBNU2567 having a growth inhibitory activity against dental caries causing bacteria; and a food composition containing the bacteria or culture thereof as an active ingredient for preventing dental caries. Since the lactobacillus sakei CBNU2567 (deposit number: KACC 91791P) produces the bacteriocin having an antibacterial activity against Streptococcus mutans causing dental caries, the food composition containing the lactobacillus sakei CBNU2567 or culture thereof as an active ingredient can be useful for preventing dental caries. Particularly, the lactobacillus sakei CBNU2567 is a lactic acid bacterium which is derived from kimchi and beneficial to human body, and the strain or bacteriocin produced thereby has advantages of being safely consumed in a form of fermenting agents or additives for various kinds of foods, beverages, and products for healthy teeth such as lactic acid medicines, fermented milk products, dairy products, soymilk, chewing gum, cheese, and kimchi for a long time.
