Abstract

To develop a practically useful power model for the binary monosodium glutamate (MSG)-5'-ribonucleotide (Rb) mixture, the taste intensities of the MSG-Rb mixture were subjectively evaluated by the method of magnitude estimation, covering the concentration ranges of practical meaning of the two taste substances. The taste intensities of the MSG-Rb mixture can be well correlated with the physical concentration of the two taste substances, using the practical synergistic model shown below: R=920 U0.372 V0.271 where R is the sensory magnitude estimate, and U and V are the concentrations of MSG and Rb in the mixture, respectively.
