Abstract

The article presents the results of a study on the fractional composition of protein in grain of 17 different varieties, hybrids and maize lines of the selection of the RosNIISK "Rossorgo" harvest of 2020. High-protein corn samples were identified. The maximum content was 13.58% in the early maturing line of RSC 3. A large amount of albumins (2.3%) was noted in the protein of corn grain of the Zuckerka variety with a simultaneously low index of the number of prolamins (1.67%). This variety has an advantageous combination of protein fractions within the nutritional value of protein. Along with the high protein content in the grain, high values of albumin and globulin fractions were recorded in the RSK 3 line.
