Abstract

The purpose of this study is to sum up several pre-defined researches on Korean traditional tea food and tests the possibility of tteok(rice cake) as the future strategic value. First step is representing four elements of taste, convenience, promotion of health, and unity as main characters of tteok as tea food. Through the Delphi analysis, basic experimental research is proceeded for providing a foundation for the development of selected properties that can be used as a future differentiation strategy.
 Delphi analysis is conducted for the purpose of collecting opinions of the mission group of professionals with non-professionals about objective verification and development of selected properties from June 1 to July 31, 2016. Mixed questionnaire of open and closed inquiries draws appropriate details and examines the opinion agreement between the panels.
 In the first Delphi survey results of this study, based on standard of CVR 0.5 or higher, an average 5.0 or greater, the median 6.0 or greater, all items which are suggested at the questionnaire have been determined as final items. Unity is deduced as the most important element with an average 6.000. Kendall s W is shown in the range of 0.3459~0.3708, appeared to match the general opinion between the Delphi panel.
 With the results of analysis, this study presents the final draft of selection properties of Tteok as tea food to taste, convenience, promotion of health, and unity. It is expected that this experimental study contributes to create a foundation for the formulation of future development strategies through the practical verification and expansion of details.
