Abstract

Mechanically separated poultry meat (MSPM), being a valuable food raw material, is widely used in the meat industry. Therefore, its detection in finished products is an urgent task in controlling their quality and composition. The article presents the results of the application of histochemical staining methods to identify bone fragments as the main indicator of the presence of MSPM in meat products. To ensure accuracy and first of all, comparability of results of histological investigations, it is important that all laboratories adhere to the principles of the microscopic laboratory practice and use the uniform methodology for preparation of histological specimens and interpretation of obtained results.
