Abstract

The purpose of this study is to contribute to the revitalization of restaurant business by reproducing the process of a hoetjip manager's extraordinary working life and success story after founding the business with a study of life history research, a qualitative study. The results of this study are as follows. First, President Lee Bada created a sound occupation view as a chef through unusual choices and determination, and through the foregoing, he developed a future-oriented kitchen work culture. Second, after the establishment of the hoetjip, President Lee Bada has exhibited servant leadership to practice low attitude and consideration thereby strengthening emotional empathy with business partners and acting as a counselor to employees. Third, President Lee Bada discovered and implemented unique policies in the concept and promotion of restaurant operation thereby achieving innovation and high performance in hoetjip management. The results of this study explored the process of transformation into a unique philosophy and entrepreneur through the life history of a chef. It is expected that the process and results will provide useful directions for those who want to become cooks and those who want to start a restaurant business hereafter.
