Abstract
The article describes the problems of production veterinary and sanitary control of raw materials and products at meat industry enterprises in the light of modern requirements of science and market economy. The authors discuss ways to increase the effectiveness of state veterinary and sanitary supervision in all areas of production of animal products. Particular attention is paid to the training and retraining of veterinary specialists in veterinary expertise. There is a need to increase the level of knowledge and professional experience in the inspection work and to realize responsibility for the results of activities in any area of production. Additional vocational training was recommended for private entrepreneurs and owners of enterprises engaged in the processing and sale of animal products on sanitation and hygiene in the production workshops of enterprises of the agro-industrial complex. Practice shows that veterinary doctors with only good training in all issues of input, operational and output control, who have undergone additional professional training 210 in special programs, can effectively carry out vetsanexpertiza at various facilities. To do this, it is necessary to develop and approve a unified program for certification of veterinary specialists for the whole country, taking into account the peculiarities of servicing various industry enterprises. The development of such a program should be entrusted to experienced workers of industry universities, research institutes and vetsanexpertiza laboratories. It should reflect the theoretical training and practical activities of veterinary specialists at meat producing plants, sausages and canneries, refrigerators and in state vetsanekpertiza laboratories at markets and fairs. If the problems of the State Veterinary Control at the agro-industrial complex enterprises are not solved today, then the situation of production hygiene and veterinary and sanitary control of raw materials and finished products will later require significant legislative and legal adjustment, high financial costs and improved standards of relations between food producers and their consumers. State veterinary control of raw materials and products is the basis for food security of the population.
