Abstract

Every year, food security issues become especially important, since fulfilling this task can have a beneficial effect on the country’s economy, healthcare and education. A hot topic today is the area related to nutrition and food on the planet. The rejection of animal proteins has become increasingly widespread, which has pushed manufacturers to look for alternatives to meat and dairy products and to produce plant-based food products. Raising cattle requires large areas and is economically more expensive than alternatives. The risks of introducing plant isolate from legumes were analyzed using mathematical tools and methods; A management plan for the key risks of introducing bean protein has been developed, and conclusions based on the results of the analysis are presented.
