Abstract

The chemical composition of wild buckthorn berries (fruit pulp, seed, shell) grown at the Sevan basin has been investigated. Fruit and berry alcoholic beverage has been produced from the buckthorn berries. The physicochemical and organoleptic indices of the produced wine material and fruit and berry alcoholic beverage has been determined. The beverage produced from the wild buckthorn contains natural bioactive substances, and hence, due to the developed technology the production of high-value fruit and berry alcoholic drinks can be ensured.
