Abstract

In viticulture and winemaking, the concept of terroir, which is a set of soil and climatic characteristics of the area, is of great importance. The article analyzes parametric methods of land evaluation, which can potentially be used in relation to terroir. The most suitable method is tested on the example of key areas of the winery, located on the Taman Peninsula. The need to evaluate not only the surface horizons of the soil, but also the deep layers is revealed.
