Abstract

The article presents the results of studying of physico-chemical parameters of acidic disinfectants based on peracetic acid used on the chicken processing line of a large meat processing plant. An organoleptic assessment was carried out, the pH level and electrical conductivity of seven products were determined. The obtained indicators confirmed that all seven products are characterized by type as acidic. The levels of components that can reduce the effectiveness of disinfectants were also analyzed: the presence of nitrates, chlorides and sulfates. The proposed control of electrical conductivity and the content of strong acid ions will allow consumers to choose the most optimal disinfectant.
