Abstract

In the Republic of Kazakhstan in 2019, a Program was adopted to provide the population with apples, which implies an increase in the volume of their production, and therefore the possibility of obtaining various processed products from them, the quality of which depends, first of all, on the quality of the fruits, their chemical composition, and, consequently, from the selected variety. As part of our dissertation research, work is being carried out to obtain a new product for our country - apple chips with high dietary and taste properties, which are quite popular abroad as food products intended for healthy and functional nutrition with high antioxidant activity, containing a number of useful components and trace elements such as fructose, glucose, malic acid, fiber, pectin, iron. Obtaining apple chips from local raw materials is an urgent task of our research, as this affects the economic efficiency of the production of finished products. The article presents the results of research on the technological assessment of 5 varieties of apples grown by one of the farms of the Turkestan region. The analysis of the yield of these varieties of apples, storage and transportation conditions, it was found that, in general, the sale of commercial varieties of apples used for direct consumption has been established, and their processing is carried out only in the form of juice products. The analysis of the appearance - taste, smell, color of the peel was carried out, the biometric indicators of apple samples - the diameter, height and weight of the fruits according to GOST 34314 were studied by means of calibration. It has been established that all the studied apple varieties of the farm DALA-FRUIT.KZ LLP meet the requirements of the GOST 34314 standard in terms of their technological parameters and can be used as a raw material for processing into apple chips
