Comparative Evaluation of Disinfectants for Controlling Listeria monocytogenes on Flammulina Velutipes

Flammulina velutipes is the most widely consumed edible mushroom in Korea, with a unique flavor and texture that support its popularity domestically and internationally. Korea produces approximately 26,000 tons of F. velutipes annually, accounting for 17% of its total mushroom production and generating export revenues of about 126 million USD. However, recent detection of Listeria monocytogenes in F. velutipes has led to product recalls and import restrictions in major markets, including the United States, thereby threatening export competitiveness. L. monocytogenes is a psychrotrophic foodborne pathogen capable of surviving and proliferating at low temperatures, causing severe diseases such as meningitis and sepsis in immunocompromised individuals, and miscarriage or fetal death in pregnant women. This study evaluated the antibacterial efficacy of peracetic acid (PAA) among several disinfectants for controlling Listeria contamination. Treatment with 80 ppm PAA once daily or once every two days effectively inhibited Listeria growth on F. velutipes surfaces without affecting mushroom fresh weight or marketability. Furthermore, PAA treatment suppressed not only Listeria but also other pathogenic microorganisms, suggesting improved overall microbial safety. PAA decomposes into water and oxygen, producing no harmful residues, and is approved for organic food production. Its ease of field application further enhances practicality. These findings indicate that PAA is an effective, eco-friendly method for controlling L. monocytogenes contamination in F. velutipes, and its implementation could strengthen the microbiological safety and export stability of Korean mushrooms in global markets.

Advancements in Electrochemical Sensing: Nanocomposites for Vanillin Detection in Food Products

Recent advancements in electrochemical sensing have significantly improved the detection of vanillin, an essential flavor compound in food products. This review discusses notable innovations, including developing 3D hybrid sensors that combine Silver-Palladium (Ag- Pd) bimetallic nanoparticles with graphene oxide. These sensors offer a broad detection range, low detection limits, and high recovery rates. Other advancements feature carbon paste electrodes (CPE) modified with cadmium oxide nanoparticles and single-walled carbon nanotubes, manganese dioxide nanowire hybrid electrodes with reduced graphene oxide, and various nanocomposite sensors such as poly (glutamic acid) with multiwalled carbon nanotubes and molybdenum disulfide-polyaniline-graphitic carbon nitride. These technologies demonstrate exceptional sensitivity, selectivity, and reliability, with detection limits as low as 0.0032 μM and broad dynamic ranges. These technologies' superior sensitivity and reliability should reassure and instill confidence in the potential of electrochemical sensing in vanillin detection. Despite these improvements, several challenges persist, including issues related to long-term stability, reproducibility, specificity in complex real-world samples, and scalability for commercial production. Addressing these challenges is essential for advancing the practical application of electrochemical sensors in vanillin detection. Future research is crucial to address these challenges and further enhance the field of electrochemical sensing. Future research should focus on improving sensor durability, expanding testing across diverse matrices, and exploring cost-effective manufacturing methods to ensure these advanced sensors can be widely implemented in food safety and quality control.

The role of social media marketing content features in building brand trust and influencing purchase decision of healthy food and beverage products

This study investigates the influence of social media marketing content features on consumers' purchase decisions of ready-to-consume healthy food and beverage products. Specifically, it examines the roles of interactivity, informativeness, entertainment, and perceived relevance in shaping brand trust, which in turn affects purchase behavior. Data were collected via an online survey of 241 consumers aged 18–45 residing in Greater Jakarta who engage with related social media content. Using Partial Least Squares Structural Equation Modeling (PLS-SEM), the results reveal that informativeness, entertainment, and perceived relevance significantly enhance brand trust. However, interactivity does not have a significant effect. Brand trust is shown to have a strong and positive influence on purchase decisions. These findings highlight the importance of delivering informative, relevant, and engaging content in building consumer trust and encouraging purchase behavior within the healthy food and beverage sector.
