THE EFFECT OF ROSEHIP POWDER ON THE COLOR OF POULTRY CUTLETS

This article experimentally evaluated the effect of a mixture of plant origin on the pigment myoglobin, which plays an important role in the color formation of poultry. During the research work, experimental samples were prepared on the basis of four different types of poultry, and two different samples were prepared for each of them. In the first, only nitrite salt was used, in the second, nitrite salt was added along with rosehip powder. The mixture of plant origin made it possible to relatively determine its influence on the state of myoglobin and the color of meat. Experiments were carried out using colorimetric analysis methods and the main color indicators of meat samples were determined. The results of the study showed that in samples with the addition of rosehip powder, there was a preservation of the intensity of the red color and an increase in color fastness. It was found that the antioxidant properties of the mixture of plant origin slow down the processes of oxidation of myoglobin and contribute to improving the appearance of meat. The use of a plant-based additive made it possible to comparatively assess the redox state of myoglobin and the color characteristics of meat. The studies were carried out using colorimetric analysis methods, and color changes were evaluated according to the Munsell, XYZ, and CIELab systems. The obtained results showed that in goose and duck meat samples with the addition of rosehip powder, the color shifted toward the red region, while the decrease in lightness (V = 4.4-5.8) is explained by a higher concentration of myoglobin. At the same time, broiler chicken and turkey meat shifted toward the pink–orange region, and an increase in lightness values (V = 7.5-7.8) was observed. These changes in color and lightness confirm the effect of using nitrite salt and rosehip powder on the formation of meat color.

Sources of Human Campylobacteriosis Cases in Estonia and the Genomic Associations with Broiler Chicken Meat Isolates

This study used three complementary datasets to investigate the relationship between human Campylobacter infections in Estonia and potential sources. A targeted dataset of 15 C. jejuni genomes with overlapping sequence types from human cases and broiler chicken meat was analysed using genotyping and in silico antimicrobial resistance profiling, alongside 20 human isolates for source attribution. Additionally, 12,111 isolates were analysed to provide population-level context. The core genome multilocus sequence typing showed a high similarity (less than three allelic differences) between the human and broiler isolates of ST122, ST464, and ST7355, indicating poultry as a likely source, whereas ST9882 was more divergent (13–18 allelic differences). The resistance profiles were consistent within ST122, ST464, and ST7355, and all were resistant to ciprofloxacin, nalidixic acid, ampicillin, and tetracycline, while ST9882 additionally exhibited aminoglycoside (streptomycin) resistance. The source attribution linked 77.8% of the human cases to chicken and 22.2% to cattle. A novel genotype, ST11001, was identified in humans and attributed to cattle source, while C. coli isolates were linked to birds and sheep. Poultry dominated the larger dataset (87.3%). Gastroenteritis was the predominant clinical presentation (98.5%), whereas ST22 and ST122 were associated with Guillain–Barré syndrome. These findings support poultry as a major reservoir of human Campylobacter infections and highlight the need for coordinated cross-border surveillance.

Microwave-Assisted Extraction of Chiltepin Pepper Yields Bioactive-Rich Extracts That Preserve Antioxidant and Nutritional Quality of Broiler Chicken Meat During Refrigerated Storage.

Natural antioxidants are increasingly sought to enhance meat quality and shelf-life, reducing reliance on synthetic additives. This study examined how microwave-extracted chiltepin pepper affects broiler chicken meat during storage at 4°C. Pre-extraction optimization improved extraction criteria (raising desirability from 86.2 and 86.7% to 92.2 and 93.7%). Extracts prepared with optimal desirability from Daewoo (CTPEd) and Samsung (CTPEs) microwaves contained 44 and 60 bioactive compounds, respectively. Antioxidant and antibacterial activities of the extracts were evaluated alongside conventional additives like salicylic acid and d-α-tocopherol. Fresh 100g meat samples were assigned to five treatments: Control (no antioxidant), Vitamin E (0.033mL dl-α-tocopherol), SA (salicylic acid), CTPEd (100mL), and CTPEs (100mL), each with four replicates in a marinade; soaked 45min before storing up to 7 days in a completely randomized setup design. All measured parameters were significant (p < 0.05), except for the extract's effect on meat refrigeration loss. CTPEd had higher levels of monounsaturated fatty acids (1.06) than the other groups, whereas CTPEs and Vit. E had higher polyunsaturated fatty acids (0.44-0.46). On day 7, CTPEd and salicylic acid best preserved crude protein (17.09%-17.14%) and dry matter (26.19%-26.24%) with lower pH values on day 4, while CTPEs enhanced meat color and minimized lipid oxidation (TBARS). While ciprofloxacin exhibited stronger antibacterial effects, chiltepin extracts demonstrated notable antioxidant potential. These findings suggest that microwave-assisted chiltepin pepper extracts may serve as natural alternatives to synthetic antioxidants, contributing to the preservation of broiler meat quality during cold storage. PRACTICAL APPLICATIONS: Chiltepin pepper extracts, when used with microwave technology, show promise as a natural alternative to synthetic antioxidants in refrigerated poultry. They effectively inhibit lipid oxidation, help preserve polyunsaturated fatty acids, and maintain desirable physicochemical and color qualities, supporting their use in fresh or minimally processed chicken meat. Using water as the extraction solvent aligns with green extraction and sustainable processing goals. Incorporating chiltepin extracts could extend shelf life and satisfy consumers seeking naturally preserved meats, making this approach a viable alternative to plant-based preservation methods.

SARIMA-GARCH and LSTM Performance for Broiler Meat Price Forecasting: A Case Study in West Sumatra

The price of broiler chicken meat in West Sumatra is characterized by strong seasonality and high volatility. As a primary source of animal protein and a key contributor to regional inflation, accurate forecasting of these price fluctuations is essential for economic stability and policymaking. This study aims to compare the forecasting performance of the SARIMA-GARCH hybrid model against the Long Short-Term Memory (LSTM) model. The dataset consists of 1,198 daily observations spanning from 15 July 2022 to 24 October 2025, sourced from the National Food Agency (Badan Pangan Nasional). The results demonstrate that the SARIMA-GARCH model outperforms the LSTM model in terms of point forecast accuracy, as evidenced by lower prediction error metrics. Furthermore, the hybrid model successfully satisfies the statistical diagnostic criteria for volatility modeling by effectively resolving ARCH effects, ensuring the statistical validity of the residuals. While the LSTM model produces smoother long-term forecasts, the SARIMA-GARCH model effectively captures daily price fluctuations and indicates a modest upward trend over the next 28 days. These findings suggest that SARIMA-GARCH provides a more realistic depiction of short-term price movements for this specific regional market, offering a localized framework for stakeholders in West Sumatra to anticipate future market changes and maintain price stability.

Assessing transcriptomic responses of Salmonella Infantis in the presence of poultry litter

Poultry litter plays a pivotal role in the persistence, proliferation, and transmission of Salmonella. Recent studies have reported the increased prevalence of Salmonella Infantis in the broiler houses and chicken meat in the United States and Europe. Moreover, Salmonella strains could persist in the recycled litter despite undergoing several treatment methods. In commercial production systems, it is a common practice to reuse poultry litter for raising multiple broiler flocks in the United States. Therefore, it is crucial to understand the mechanism of the survival of bacteria in reused litter to curb the prevalence of Salmonella. The objective of this study was to determine the transcriptional variations in S. Infantis in the presence and absence of litter. The findings from this study will provide insights into the potential persistence mechanism of S. Infantis within the litter environments.

ANALYSIS OF THE EXPANSION POTENTIAL OF CHICKEN MEAT PRODUCTION IN THE SURKHANDARYA REGION, UZBEKISTAN

The study conducted a comprehensive analysis of the production costs of broiler chicken meat and the live performance metrics of broiler flocks across a sample of 100 poultry enterprises located in the Surkhandarya region during the period of September to October 2025. The study estimated the average cost of production per kilogram live weight of broiler to be 35,690 UZS. The analysis revealed that feed costs and chick procurement costs constituted the most significant components of the total production cost per kilogram of live broiler weight, accounting for 69.2% and 19.6%, respectively. The results indicated that the cost of producing one kilogram of live broiler weight in the Surkhandarya region is approximately 11% to 13% higher compared to other regions of Uzbekistan. The objective of this study is to evaluate the performance of the halal broiler chicken meat supply chain at UD Mustika through the implementation of the Balanced Scorecard (BSC) integrated with Key Performance Indicators (KPI) and the Traffic Light System (TLS), in accordance with HAS 23000 and HAS 23103. Using a quantitative method, data were collected through observation, interviews, and questionnaires. Performance indicators were assessed based on achievement levels and classified using TLS to identify conditions and prioritize improvements. The research framework included problem identification, determination of halal performance indicators, measurement and classification, gap analysis, and managerial implications for sustainability. Results show that overall supply chain performance is generally good, with the highest achievements in internal business process and customer perspectives, while financial and learning &amp; growth perspectives show red and yellow indicators, requiring managerial attention. Strengthening human resource competencies and halal process innovation is key to improving financial performance and sustaining the halal assurance system.

From byproduct to benefit: Effects of olive mill wastewater on broiler chicken meat nutrition and flavor.

The primary objective of this study was to investigate the effect of adding olive mill wastewater (OMWW) to a diet on the meat composition and sensory profile of broiler chickens. The investigation involved an experiment with 100 broilers that were 45 days old. Meat quality assessments were conducted on the pectoral muscle immediately after slaughter. The study revealed a significant difference in meat composition between the groups, specifically noting variations in mineral matter, carbohydrates, total phenol (TP) components (P = 0.00), and flavonoids (P = 0.03). The identified increase in TP components and flavonoids that are well known for their antioxidant activity explained several positive outcomes. This increased antioxidant content resulted in inhibited lipid peroxidation after storage (as indicated by thiobarbituric acid-reactive substance values; P ≤ 0.0001) and protected meat color from oxidation where significant variations were observed in myoglobin content and the L, a, and b color parameters (P ≤ 0.0001), confirming the stabilizing effect of the OMWW diet on meat color. The sensory profile assessment also showed significant differences between the groups in several attributes: taste: differences were noted in salty taste and metallic taste; odor: variations were observed in fatty, plant, and animal odors. Crucially, the meat from the group fed with OMWW-supplemented diets was significantly preferred by panelists (P = 0.002). A preference test further showed that 65% of panelists found the meat from the OMWW group to be more tasty and tender. Relationship analyses confirmed that the diet supplemented with OMWW positively affected both the meat's biochemical composition and its organoleptic quality, leading to improved oxidative stability and enhanced consumer preference.

Abstract The effects of replacing soybean meal with Clanis bilineata (soybean hawkmoth) larval meal (CBLM) at 0%, 10%, 30%, and 50% on broiler chicken immunological responses, growth performance, and meat quality were investigated. Four food regimens were randomly assigned to 240 one-day-old male Ross 308 broiler chicks with six replicates per group and ten birds per pen. Dietary CBLM significantly boosts blood immunological markers, with greater IgG (6.8 g/l, ), IgA (2.4 g/l, ), and IgM (4.1 g/l, ) levels in the 30% group compared to the control group (5.4, 1.8 and 3.2 g/l). The immunomodulatory effect was confirmed by a decrease in pro-inflammatory cytokines IL-6 and TNF-α in the 30% CBLM group compared to the control (62.3 vs 75.0 pg/ml, ; 69.8 vs 82.1 pg/ml, ), indicating an improved anti-inflammatory state rather than immunological over-activation. The 30% CBLM group had the highest body weight of 2035.6 g (vs 1865.4 g in control, ), an average daily gain of 94.5 g/day (vs 87.5 g/day in control, ), and a feed conversion ratio of 1.24 (vs 1.29 in control, ). These data imply that moderate CBLM inclusion (at 30%) in broiler’s diets can improve immunity, development, and meat quality, providing a sustainable and functional protein supply.

Chicken meat is a source of animal protein which is easily damaged due to its high water content. Chicken meat that is bought and sold could potentially become a place for the growth of bacteria that cause foodborne diseases.This study aims to determine total bacterial contamination, Coliform, Escherichia coli, and Salmonella sp. on broiler chicken meat in Badung Regency and determine the suitability of broiler chicken meat samples following food safety standards. Samples were taken using a purposive sampling method in six sub-districts in Badung Regency, namely Petang, Abiansemal, Mengwi, North Kuta, Kuta and South Kuta sub-districts at traditional markets that sell broiler chicken meat. The samples were tested using the pour plate and streak platting method. Parameters tested include Total Plate Number (ALT), Coliform, Escherichia coli, and Salmonella sp. on broiler chicken meat samples. Coliform and Escherichia coli bacteria were detected using Petrifilm ready-to-use media, while Salmonella sp. tested on selective Salmonella-Shigella Agar (SSA) media and catalase test and Gram staining. The research result showed that the contamination rates in broiler chicken breast meat were: Total Plate Number (ALT) 105 CFU/g to 107 CFU/g; Coliform and Escherichia coli 101 CFU/g to 104 CFU/g; Salmonella sp. positive in all samples, so that the samples tested did not meet the safety quality requirements for chicken meat according to SNI 3924: 2009.

The background of this research was that per capita consumption of broiler chicken meat was lower than the recommended nutritional adequacy in households receiving the Family Hope Program (Program Keluarga Harapan/PKH) in Pekanbaru City, Riau Province. The objective of this study was to analyze broiler chicken meat consumption patterns and identify the factors that influence them among PKH households. Respondents in this study were 315 PKH households, selected through a multistage sampling approach using simple random sampling techniques. Data were analyzed using descriptive statistics and multiple linear regression. The findings show that broiler chicken meat consumption was significantly affected by broiler chicken meat price, other poultry product prices, beef prices, cooking oil prices, household size, household income, and the occupation of the household head, with a significance level of 5%. The per capita/day consumption pattern of broiler chicken meat differs by demographic characteristics, averaging 20.36 grams, far below the Ministry of Health’s recommendation of 80 grams, reflecting limited purchasing power and nutritional awareness among low-income households. The policy implication of this research is that the government should implement policies to stabilize food prices, promote community economic empowerment, and provide nutritional education to increase consumption of broiler chicken meat as a source of protein among households of PKH participants and ensure it aligns with recommended dietary standards.

Comprehensive impacts of black elderberry (Sambucus nigra L.) extract on mitigating acute heat stress, augmenting antioxidant defenses, and enhancing broiler chicken health and meat quality

ABSTRACT Poultry genotypes’ low heat tolerance affects birds’ health, which results in major economic losses and calls for an immediate, consumer-friendly dietary plan. This study assessed black elderberry extract (BE) on 120-Cobb chickens, 35-days old, to mitigate the adverse-effects of acute heat stress on clinical and pathological parameters, antioxidant status, and meat quality. Birds were divided into four-groups: NEG: maintained at thermoneutral temperature (24 ± 1°C); 2) BE: administered 0.15 g/L BE extract for 12-h while kept at 24 ± 1°C; HSBE: maintained at 38 ± 1°C for 6-h and treated with BE extract (0.15 g/L); HS: maintained at 38 ± 1°C for 6-h. BE supplementation under heat stress significantly mitigated these effects, reducing rectal temperature and droppings moisture (p < 0.05), lowering both macroscopic and histological lesion severity at 3 and 12 h (p < 0.05), and improving meat quality traits—lower cooking and thawing losses, enhanced water-holding capacity, and better tenderness – while also diminished muscle malondialdehyde concentration, and elevated levels of polyunsaturated fatty acids (PUFA) and omega-3 PUFA, particularly alpha-linolenic acid (p < 0.05). The results suggest that the use of BE extract in the water of broiler chickens during periods of heat stress is beneficial, and further research on heat stress-reducing efficacy of BE is needed.

Application of Black Garlic-Based Bioconservants as Natural Preservatives for Chicken Meat Through Antibacterial Studies

Black Garlic has great potential as a natural bioconservant, because of anti-microbial activity, anti-inflammation, anti-allergic, anti- diabetic, and anti-cancer. However, research on its application as a bioconservant for chicken meat, particularly against multi-drug-resistant pathogens (E. coli, Salmonella sp., and Staphylococcus aureus) remains limited. The potential benefits of combining black garlic application with cold storage are also underexplored. This study investigates the potential of Black Garlic (BG) extract as a natural bioconservant to preserves broiler chicken meat by inhibiting bacterial growth and maintaining sensory quality. A Randomized design was used with six treatments applied: control, sodium benzoate (0.1%), and BG extract at 5% ,10%, 15%, and 20%. The samples were marinated for 30 minutes, wrapped, and stored at ± 10°C for seven days. Microbiological analysis showed that the 20% BG treatment effectively suppressed Salmonella to undetectable levels and significantly reduce E. Coli and Staphylococcus aureus, comparable to sodium benzoate. Lower concentrations were less effective, particularly against S. aureus. The measurements of pH indicated stabilization around 5.00-5.5 in BG-treated samples, with the 20% concentration exhibiting the strongest acidifying effect. Sensory evaluation by 26 panellists indicated that 15% BG improved the freshness of aroma but negatively affected color and texture at higher concentrations. Moisture content slightly increased in BG treatments, suggesting improved water retention. These findings demonstrate that black garlic extract, especially 15%-20%, can serve as a natural preservative for chicken. It is offer antibacterial protection while maintaining acceptable of sensory attributes. Moreover, the result highlights the potential of BG as a safer alternative to synthetic preservatives in the poultry industry.

This study aims to analyze and compare the price responsiveness of broiler chicken meat and native chicken meat in relation to household consumption patterns in Tarogong Kidul District, Garut Regency. A quantitative approach was employed using simple linear regression analysis based on primary data obtained through observations and interviews conducted in traditional markets. The analysis examines the extent to which price changes influence the demand for both commodities. The results indicate that broiler chicken shows a very strong relationship between price and demand, reflected in an R² value of 0.963. Statistical testing further demonstrates that price has a significant effect on broiler chicken demand (0.018 &lt; 0.05), indicating that its demand is elastic and highly sensitive to price fluctuations. In contrast, native chicken shows an R² value of 0.698 and an insignificant price effect on demand (0.164 &gt; 0.05), suggesting inelastic demand that remains relatively stable despite price changes. These findings reveal that consumers adjust their broiler purchase quantities more quickly in response to price changes, whereas native chicken consumption is more strongly influenced by taste preferences and habitual factors. The study concludes that there is a clear difference in price sensitivity between the two types of chicken. The implications of this research include the need for government price stabilization policies for broiler chicken to maintain household affordability, as well as quality improvement and marketing strategies for native chicken producers to strengthen competitiveness amid changing consumer demand.

Dietary Feed Additive Microencapsulation Synbiotic on Physical Quality of Broiler Chicken Meat

This research aimed to investigate the microencapsulation of synbiotics that combine probiotics, Bacillus subtilis, with prebiotic MOS for poultry diet to influence the physical quality of poultry meat. The material used in this study was 100 one-day-old unsexed broilers Cobb 500. The birds were randomly divided into the following 4 experimental groups, with five replications: The treatments were (T1) basal diet (control) without microencapsulation Synbiotic, T2, T3, and T4 supplementation basal diet with 0.25, 0.50, and 0.75% of microencapsulation synbiotics of Bacillus subtilis and MOS, respectively. The variables were physical qualities of poultry meat, including acidity (pH), cooking losses, water holding capacity (WHC), and hardness. The basal diet was formulated to meet completely the nutrient requirements broilers based on NRC (1994) recommendations. The dietary treatments were based on corn grain-soybean meal and balanced with other nutrients. The data were analyzed with one-way ANOVA in a Completely Randomized Design (CRD) using the Statistical Package for Social Science or IBM SPSS Statistics version 26, significant differences among the means were determined by using Duncan’s multiple range test at P0.05. The results showed that the treatment groups did not have a significant effect (P value0.05) on the physical qualities of broiler meat, which are acidity (pH), cooking losses, water holding capacity (WHC), and tenderness. To conclude, supplementation of microencapsulation synbiotic has no negative effects on the physical qualities of the meat reflected in the value of all variables, which are in the normal range of the physical quality of broiler meat.
