Nutmeg Essential Oil, Red Clover, and Liquorice Extracts Microencapsulation Method Selection for the Release of Active Compounds from Gel Tablets of Different Bases.

The current study presents the most suitable method for encapsulating nutmeg essential oil with liquorice and red clover. Two widely used methods, spray-drying and freeze-drying, were employed to find the most suitable for essential oil volatile compounds' protection. Results showed that freeze-dried capsules (LM) had a higher yield (85.34%) compared to the exact formulation of spray-dried microcapsules (SDM)-45.12%. All the antioxidant and total phenolic compounds' results obtained with the LM sample were significantly higher compared with SDM. LM microcapsules were incorporated in two different bases with no additional sugar (gelatin and pectin) for targeted release. Pectin tablets had firmer and harder texture properties, while gelatin tablets had a more elastic texture. There was a significant impact on texture changes caused by microcapsules. Microencapsulated essential oil with extracts can be used alone or in a gel base (pectin or gelatin, depending on user preferences). It could be an effective product to protect the active volatile compounds and regulate the release of active compounds and give a pleasant taste.

Implication of the Polymeric Phenolic Fraction and Matrix Effect on the Antioxidant Activity, Bioaccessibility, and Bioavailability of Grape Stem Extracts

The bioaccessibility and bioavailability of phenolics compounds of two grape stem extracts with different composition were studied. High polymeric extract (HPE) presented a higher content of total phenolics (TPC), procyanidins, hemicelluloses, proteins, and ashes, whereas low procyanidin extract (LPE) showed a higher fat, soluble sugars, and individual phenolic compounds content. Corresponding to its higher total phenolics content, HPE possesses a higher antioxidant activity (TEAC value). The digestion process reduced the antioxidant activity of the HPE up to 69%, due to the decrease of TPC (75%) with a significant loss of polymeric compounds. LPE antioxidant activity was stable, and TPC decreased by only 13% during the digestion process. Moreover, a higher antioxidant phenolic compounds bioavailability was shown in LPE in contrast to HPE. This behaviour was ascribed mainly to the negative interaction of polymeric fractions and the positive interaction of lipids with phenolic compounds. Therefore, this study highlights the convenience of carrying out previous studies to identify the better extraction conditions of individual bioavailable phenolic compounds with antioxidant activity, along with those constituents that could increase their bioaccessibility and bioavailability, such as lipids, although the role played by other components, such as hemicelluloses, cannot be ruled out.

Novel eco-friendly initiation system based on vitamin C for energy efficient synthesis of PMAA hydrogel used for delivery of phenolic compounds

This study reports successful free radical synthesis of pH-sensitive hydrogels based on poly(methacrylic acid) (PMAA) by using new green initiation system based on vitamin C and hydrogen peroxide (VC/H2O2). The application of proposed initiation system provides many advantages, above all cost effective and eco-friendly synthesis which can be carried out under ambient conditions. The obtained PMAA hydrogels are analyzed by various technics: Differential Scanning Calorimetry, Fourier Transform Infrared spectroscopy, Scanning Electron Microscopy and by using single compression tests. In line with the intended application, PMAA hydrogels are further investigated in terms of their potential to be used for encapsulation and controlled release of active substances such as antioxidant phenolic compounds. To keep it green, the total phenolic compounds (TPC) were obtained from orange peels waste by applying ultrasonic-assisted extraction and deep eutectic solvent (DES) based on glycerol:urea:water. The TPC were successfully encapsulated into the PMAA hydrogels which were previously estimated to have the optimal mechanical and swelling properties with respect to the final application. The swelling behavior of the PMAA hydrogels and controlled release of the TPC were tested as a function of the various synthesis parameters in several media with different pH values. It was shown that TPC can be released in control manner in medium which simulates the environment in human intestines, finally resulting in enhanced bioavailability of TPC, reduced side effects and improved therapeutic effects.

The bioaccessibility, bioavailability, bioactivity, and prebiotic effects of phenolic compounds from raw and solid-fermented mulberry leaves during in vitro digestion and colonic fermentation

The bioaccessibility and bioactivity of phenolic compounds in mulberry leaves (MLs) relate to the digestion process. This study was aimed at investigating the release of phenolic compounds, as well as the potential bioactivities of raw MLs (UF-MLs) and solid-fermented MLs (F-MLs) during in vitro digestion and colonic fermentation. Antioxidant activities and phenolic compounds released in the digested extracts are shown in decreasing order of location: intestinal > oral > gastric. The bioavailability of total phenolics and flavonoids in F-MLs were 10.14 ± 1.81 % and 6.66 ± 0.55 %, respectively. There was no significant difference in the inhibitory activity of α-glucosidase during gastrointestinal digestion. For colonic fermentation, the highest free radical-scavenging ability of DPPH and ABTS was found at 24 h and 48 h, respectively. The release of phenolic compounds was not significantly different after 48 h of colonic fermentation. LC-MS/MS showed that liquiritigenin, apigenin, chlorogenic acid, and ferulic acid were the major compounds released in the small intestine digestion, and valerenic acid was the primary colonic metabolite. 16S rDNA showed that UF-MLs promoted the growth of Bifidobacterium and F-MLs lowered the Firmicutes-to-Bacteroidetes ratio. Furthermore, F-MLs increased the concentration of acetic acids (25.75 ± 0.86 mM) after 24 h of colonic fermentation. The results of this study indicated that F-MLs exhibit relatively higher phenolic bioaccessibility, antioxidant activities, and SCFA production and are a promising candidate as a health food supplement.

The Effect of Nonthermal Pretreatment on the Drying Kinetics and Quality of Black Garlic.

Black garlic is obtained from regular garlic (Allium sativum L.) through the aging process and consequently gains many health-promoting properties, including antidiabetic and antioxidant. However, the material is still prone to microbiological deterioration and requires a long time to dry due to its properties. Therefore, this study aimed to investigate the effect of various drying methods on the quality of black garlic as well as determine the influence of selected nonthermal pretreatments on the drying kinetics and quality of black garlic, which is especially important in the case of the materials that are difficult to dry. The Weibull model was chosen to describe drying kinetics. Additionally, color, water activity together with antioxidant activity, phenolic compounds, and antidiabetic potential were determined. This study found that the application of a pulsed electric field (PEF), a constant electric field (CEF) as well as a magnetic field (MF) significantly reduced the time of drying (by 32, 40, and 24 min for a PEF, a CEF, and a MF, respectively, compared to combined drying without the pretreatment), and resulted in high antidiabetic potential. However, the highest content of phenolic compounds (1123.54 and 1125.36 mg/100 g dm for VMD125 and CD3h-VMD, respectively) and antioxidant capacity (ABTS = 6.05 and 5.06 mmol Trolox/100 g dm for VMD500 and CD6h-VMD, respectively) were reported for black garlic treated by vacuum-microwave drying and combined convective pre-drying followed by vacuum-microwave drying. Overall, the nonthermal pretreatment decreased the time of drying and showed very good efficiency in maintaining the antidiabetic potential of black garlic, especially in the case of the materials pretreated by a constant electric field (IC50 = 99 and 56 mg/mL, for α-amylase and α-glucosidase, respectively).

Antioxidant Activity and Phenolic Compound Identification and Quantification in Western Australian Honeys.

This study reports on the total phenolic content and antioxidant activity as well as the phenolic compounds that are present in Calothamnus spp. (Red Bell), Agonis flexuosa (Coastal Peppermint), Corymbia calophylla (Marri) and Eucalyptus marginata (Jarrah) honeys from Western Australia. The honey's total phenolic content (TPC) was determined using a modified Folin-Ciocalteu assay, while their total antioxidant activity was determined using FRAP and DPPH assays. Phenolic constituents were identified using a High Performance Thin-Layer Chromatography (HTPLC)-derived phenolic database, and the identified phenolic compounds were quantified using HPTLC. Finally, constituents that contribute to the honeys' antioxidant activity were identified using a DPPH-HPTLC bioautography assay. Based on the results, Calothamnus spp. honey (n = 8) was found to contain the highest (59.4 ± 7.91 mg GAE/100 g) TPC, followed by Eucalyptus marginata honey (50.58 ± 3.76 mg GAE/100 g), Agonis flexuosa honey (36.08 ± 4.2 mg GAE/100 g) and Corymbia calophylla honey (29.15 ± 5.46 mg GAE/100 g). In the FRAP assay, Calothamnus spp. honey also had the highest activity (9.24 ± 1.68 mmol Fe2+/kg), followed by Eucalyptus marginata honey (mmol Fe2+/kg), whereas Agonis flexuosa (5.45 ± 1.64 mmol Fe2+/kg) and Corymbia calophylla honeys (4.48 ± 0.82 mmol Fe2+/kg) had comparable FRAP activity. In the DPPH assay, when the mean values were compared, it was found that Calothamnus spp. honey again had the highest activity (3.88 ± 0.96 mmol TE/kg) while the mean DPPH antioxidant activity of Eucalyptus marginata, Agonis flexuosa, and Corymbia calophylla honeys were comparable. Kojic acid and epigallocatechin gallate were found in all honeys, whilst other constituents (e.g., m-coumaric acid, lumichrome, gallic acid, taxifolin, luteolin, epicatechin, hesperitin, eudesmic acid, syringic acid, protocatechuic acid, t-cinnamic acid, o-anisic acid) were only identified in some of the honeys. DPPH-HPTLC bioautography demonstrated that most of the identified compounds possess antioxidant activity, except for t-cinnamic acid, eudesmic acid, o-anisic acid, and lumichrome.

Sonchus arvensis: Antioxidant activity, phenolic profile, and phytochemical screening

To find new, safe, and more effective drugs, the present study investigated antioxidant activity, phenolic compounds, and phytochemical screening of S. arvensis. The antioxidant activity, phenolic compound analysis, and phytochemical analysis of distinctive extracts of S. arvensis roots and leaves were evaluated using standard methods. The result of the successive value against petroleum ether, methanol, and H2O extracts of 500 g of S. arvensis leaves demonstrated significant successive values of 84.8%, 43.2%, and 17.9%. Based on the IC-50 analysis, leaves extract methanol has been found to have a significant value of 0.501, 0.869, and 0.769, respectively, while leaves extract petroleum ether has a significant value of 0.501. As predicted, petroleum ether extracts givethe best TLC results in the solvents used in the mobile phase (ethyl acetate and n-hexane).

Atividade antioxidante e compostos bioativos na farinha de ora-pro-nóbis (Pereskia aculeata Miller)

Abstract The ora-pro-nóbis (Pereskia aculeata Miller) is a cactus popularly known as “poor man's meat” due to its popular use related to the protein content found in its leaves and its low cost, thus being classified as an Unconventional Food Plant (UFP). The plant is recognized for the high nutritional value of their leaves, and it can be used in cooking and folk medicine. However, studies on the chemical characteristics and antioxidant capacity of ora-pro-nóbis fruits are scarce. This study aimed to evaluate the antioxidant potential and phenolic compounds of the stem and leaf flours and fruit pulp of P. aculeata Miller. The stem and leaves were washed and dried in a circulation oven at 60° ± 2 °C, and crushed in an industrial blender. The fruit was washed and macerated in natura, then hydroethanolic extracts were prepared. The content of phenolic compounds was evaluated using the Folin-Ciocalteau reagent and the results showed a total phenol content in the stem, leaves and fruits of 0.25; 1.01 and 118.2 mg EAG g-1 of extract, respectively. Antioxidants were evaluated using the DPPH method, obtaining values for stem, leaf and fruit of 1.20; 1.40 and 1.50 mg of fruit g-1 of DPPH respectively, and also by the ABTS method of stem, leaf and fruit of:13.82; 6.30; 3.20 µmol of Trolox g-1, respectively. Thus, P. aculeata Miller presented in its stem, leaves and fruits an expressive amount of phenolic and antioxidant compounds, being a potential resource to contribute to the prevention of several disorders associated with the production of free radicals as well as an alternative in the enrichment of foods and being a useful source for a food additive.

Physicochemical substances and bioactive components of wild cornelian cherry (Cornus mas L.) fruits in Erzincan province of Eastern Turkey

Turkey has a very rich flora due to diverse climatic and topographic conditions within the country. Cornelian cherry (Cornus mas L.) is an important wild edible fruits and widely distributed in Turkey and well known for its fruit antioxidants and nutrients. In this study, phytochemical content in fruits of a number of Cornelian cherry genotypes in Erzincan region were determined. The biochemical analysis included organic acids, sugars, vitamin C, antioxidant and individual phenolic compounds. In the study, organic acid content was between 253.09 mg/100 g and 112.50 mg/100 g. Vitamin C content varied between 115.85 mg/100g and 43.77 mg/100 g. Likewise, the sugar content of Cornelian cherry fruits varied from 6.17 g/100 g to 4.06 g/100 g. When the antioxidant content was examined, the highest antioxidant was 980.91 ?mol TE/g fresh weight (FW) base and the lowest was 490.38 ?mol TE/g FW. In the genotypes examined, gallic acid was determined as the highest among the individual phenolic compounds, while the individual phenolic amounts ranged from 38.93 mg/100 g FW to 4.31 mg/100 g FW. As a result of the study, it was determined that Cornelian cherry fruits are very rich in vitamin C and other phytochemicals and as a result of this examination, 24ER04 and 24ER08 genotypes came to the fore.

Effects of pretreatment and drying methods on physical properties and bioactivity of sea lettuce (Ulva rigida)

Sea lettuce (Ulva rigida) is an underutilized green macroalga. Scant knowledge and understanding exist regarding the optimal processing technologies to maximize seaweed nutrition. Pretreatment of sea lettuce before drying, either by blanching or steaming, induced diverse physical and biological property changes. Greenness increased, while lightness of the-sea lettuce reduced. Both drying processes reduced textural parameters and impacted sea lettuce bioactivity, with increased antioxidant capacity and phenolic compound content. Steaming followed by oven drying at 60 °C for 2.30 h maintained bioactivities during 4 months of storage. Food processing increased the ease of consumption and also maintained the nutritional value of the sea lettuce, thereby promoting the utilization of this seaweed as a beneficial food ingredient.

Antioxidant potential and α-glucosidase inhibitory activity of onion (Allium cepa L.) peel and bulb extracts.

Allium cepa L. is a commonly consumed vegetable that belongs to the Amaryllidaceae family and contains nutrients and antioxidants in ample amounts. In spite of the valuable food applications of onion bulb, its peel and outer fleshy layers are generally regarded as waste and exploration of their nutritional and therapeutic potential is still in progress with a very slow progression rate. The present study was designed with the purpose of doing a comparative analysis of the antioxidant potential of two parts of Allium cepa, i.g., bulb (edible part) and outer fleshy layers and dry peels (inedible part). Moreover, the inhibitory effect of the onion bulb and peel extracts on rat intestinal α-glucosidase and pancreatic α-amylase of porcine was also evaluated. The antioxidant potential of onion peel and bulb extracts were evaluated using 2,2-diphenyl- 1-picryl hydrazyl (DPPH), ferric-reducing antioxidant power assay (FRAP), 2,2'-azino-bis- 3-ethylbenzothiazoline-6-sulfonic acid (ABTS) radical scavenging assay, H2O2 radical scavenging activity and Fe2+ chelating activity. Total flavonoids and phenolic content of ethanolic extract of onion peel were significantly greater as compared to that of onion bulb. Ethanolic extract of onion peel also presented better antioxidant and free-radical scavenging activity as compared to the ethanolic extract of bulb, while the aqueous extract of bulb presented weakest antioxidative potential. Onion peel extract's α-glucosidase inhibition potential was also correlated with their phenolic and flavonoid contents. The current findings presented onion peel as a possible source of antioxidative agents and phenolic compounds that might be beneficial against development of various common chronic diseases that might have an association with oxidative stress. Besides, outer dry layers and fleshy peels of onion exhibited higher phenolic content and antioxidant activities, compared to the inner bulb. The information obtained by the present study can be useful in promoting the use of vegetable parts other than the edible mesocarp for several future food applications, rather than these being wasted.

Exploring the chemical composition and coloring qualities of cacao fruit epicarp extracts.

Cacao pod husks (CHs), the most abundant by-product of cacao beans production, can potentially become a source of functional ingredients for the food, cosmetic, and pharmaceutical industries. Three pigment samples (yellow, red, and purple) from lyophilized and ground cacao pod husk epicarp (CHE), were isolated by ultrasound-assisted solvent extraction, with yields between 11 and 14 wt%. The pigments exhibited UV-Vis flavonoid-related absorption bands at 283 nm and 323 nm and, only for the purple extract, reflectance bands in the 400-700 nm range. As per the Folin-Ciocalteu method, the CHE extracts contain high yields of antioxidant phenolic compounds amounting to 161.6, 153.9, and 167.9 mg GAE per g extract for the yellow, red, and purple samples, respectively. Phloretin, quercetin, myricetin, jaceosidin, and procyanidin B1 were among the main flavonoids identified by MALDI-TOF MS. A biopolymeric bacterial-cellulose matrix can effectively retain up to 541.8 mg of CHE extract per g of cellulose in dry weight. Also, MTT assays revealed that CHE extracts are non-toxic and increase viability in cultured VERO cells.

Effects of post-harvest UV-B irradiation on phenolic content and antioxidant activity of Rhodomyrtus tomentosa fruit

In this study, Rhodomyrtus tomentosa (Ait.) Hassk. (sim) fruits were treated with UV-B radiation for 0, 1, 3 and 6 hours with an average fluency rate of 0.67 mW/cm2 at a distance of 30 cm. Fruits were, then, stored at 8 °C to 10 °C for 21 days. During storage, the fruits were analysed for hardness, total soluble solids, and total dry matter every 7 days. The total phenolics, total anthocyanins and antioxidant capacity of the skin+pulp and the seed parts were determined. The results showed that the storage time and UV-B irradiation time significantly affected the antioxidant phenolic content of both skin+pulp and seed parts. The total polyphenols and antioxidant capacity increased immediately after UV-B treatment and decreased during storage. UV-B irradiation slowed down the decrease of antioxidant phenolic compounds in the fruit during storage. This indicated that UV-B irradiation could be a potential way to enhance phenolic antioxidants in fruits rich in phenolics.

Antioxidant Activities, Phenolic Compounds and Organic Acids of Raw and Boiled Berries of Solanum Torvum Swartz From Eastern Côte d’Ivoire

Berries of solanum torvum, referred to as wild eggplant, are widely consumed in eastern Côte d'Ivoire in boiled form in sauces or soups. This study aimed to evaluate the antioxidant potential of these fruits through the estimation of antioxidant capacities of the extracts, identification and quantification of phenolic compounds and organic acids of raw berries and boiled berries to gauge the influence of this cooking. Results showed that boiling caused a considerable decrease in the antioxidant capacity of S. torvum berry extracts. By DPPH scavenging, the effective concentration (EC50) value of extract increased from 20.00 to 42.20 µg/mL, respectively for raw and boiled berries. Regarding EC50 values for antioxidant activities via FRAP, the values of 75.10 and 87.20 µg/mL were obtained, respectively for raw and boiled berries extract. In terms of phenolic compounds, the most predominant were catechin and gallic acid with respective contents of 1.06 and 0.86 mg/kg in the raw berries; 0.86 and 0.71 mg/kg in boiled berries, demonstrating the decrease in levels of these compounds by boiling. Organic acids showed the same decreasing trend during boiling. However, using cooking water when preparing soups or sauces could minimize these losses. In addition to this, one could consider other cooking methods such as steaming to better ensure nutrient retention

Desiccation Stress Tolerance in Porphyra and Pyropia Species: A Latitudinal Analysis along the Chilean Coast.

One of the most important factors regulating the distribution and abundance of seaweeds is desiccation, triggered mainly by tidal changes and climatic variation. Porphyra and Pyropia species have evolved multiple strategies to tolerate desiccation stress; however, how these tolerance strategies differ in these species inhabiting different latitudes is still unknown. In this context, we analyzed, in situ, the physiological responses of these species (collected from 18° S to 41° S along the Chilean coast) to desiccation stress using biochemical and molecular analyses. The hyper-arid terrestrial climate of northern Chile, with high evaporation and lack of constant rain determines a very steep increase in desiccation stress in the upper intertidal during low tide for these species. Accordingly, the results showed that, in comparison with the southernmost populations, the Porphyra/Pyropia species from the north zone of Chile (18°-30° S) exhibited higher contents of lipoperoxide and carbonyls (1.6-1.9 fold) together with higher enzymatic activities, including ascorbate peroxidase, catalase, peroxiredoxin, and thioredoxin (2-3-fold). In addition, a substantial expression of cat, prx, and trx transcripts during desiccation was demonstrated, mainly in the northernmost populations. These results provide evidence of (i) significant activation of antioxidant enzymes and transcripts (principally cat and prx); (ii) participation of phenolic antioxidant compounds as a highly plastic physiological strategy to cope with desiccation; and (iii) the activation of the tolerance responses was affected by species latitudinal distribution. Thus, for the first time, this study integrated the biochemical and genetic responses of diverse Porphyra/Pyropia species to better understand their physiological dynamics of tolerance over a wide latitudinal range.

Comparison of Seasonally Adaptive Metabolic Response Strategies of Two Acer Species

Acer L. species are well known as ornamental trees due to their colourful leaves in autumn season. Acer pictum subsp. mono (Maxim.) H. Ohashi (APM) and Acer tataricum subsp. ginnala (Maximowicz) Wesmael (ATG) form leaves with completely different colours in autumn, yellow and red, respectively. In response to this phenomenon, we investigated the metabolic regulation of APM and ATG in different seasons by combining metabolomics, ionomics, the antioxidant system and pigment content. The results showed that the process of senescence and discolouration exists in leaves of different Acer species, and the regulatory strategy shows species specificity. Compared with green leaves, the accumulation of primary metabolites in autumn leaves of APM was extensively depleted, chlorophyll content was decreased, and antioxidant enzymes and C6C3C6 type phenolic compounds synergistically enhanced the antioxidant capacity of plants to cope with senescence. Carotenoid content was raised, which together with phenolic compounds (chlorogenic acid, rutin) provides the leaves with a yellow colour. The response of chlorophyll and the antioxidant system in autumn leaves of ATG is consistent with that of APM, while sugar content increases. The increased anthocyanin content in autumn leaves of ATG explains the transition of leaves from green to the red colour, which may be accompanied by the combined effect of elements (Fe, Zn, Mn) and isoflavones. This study provides a reference for the study of colouration mechanism and seasonal adaptation in Acer L. species.

Determination of antioxidant capacity, citric acid, phenolic compounds, physicochemical and sensory properties of Pepino marmalade yogurts enriched with erythritol and amaranth flour at different concentrations.

This work aimed to evaluate the feasibility of fortifying Pepino marmalade containing erythritol and amaranth flour (1, 2, and 3%) as the source of antioxidants, dietary fiber, and polyphenols in yogurt for increasing nutritional value and improving storability. Both Pepino marmalade and amaranth flour increased the phenolic content, citric acid value, viscosity, and WHC of the yogurt samples. The diphenyl-1 picrylhydrazyl scavenging activity (DPPH), radical cation (ABTS*+) scavenging assay, oxygen radical absorption capacity (ORAC), and ferric-reducing antioxidant capacity (FRAP) were found to be in the range of 4.5-46.6%, 166.2-1022µg AAE/g, 2.61-4.49 µmol Trolox/g, and 4.9-23.88 µmol Fe2+/g respectively. As the concentration of marmalade and amaranth flour increased, the samples showed higher b* and lower a* and L* values. In addition, the panelists stated that they enjoyed the yogurt samples with Pepino marmalade and amaranth flour.

Adding value to strawberry agro-industrial by-products through ultraviolet A-induced biofortification of antioxidant and anti-inflammatory phenolic compounds.

The revalorization of agro-industrial by-products by applying ultraviolet A (UVA) radiation to biofortify with phenolic compounds has been studied in recent times, showing improvements in the individual and total phenolic content and their bioactivity. Therefore, the main aim of this work was to optimize the biofortification process of phenolic compounds by UVA radiation to strawberry agro-industrial by-products (RF). Moreover, the effect of UVA radiation on the potential biological activity of the phenolics accumulated in RF due to the treatment was also determined. The assays followed a factorial design with three variables at three levels: UVA dose (LOW, MEDIUM, and HIGH), storage temperature (5, 10, and 15°C), and storage time (0, 24, 48, and 72 h). At each experimental condition, phenylalanine ammonia-lyase (PAL) and polyphenol oxidase (PPO) enzymatic activities, total phenolic compound content (TPC), phenolics profile (TPCHPLC), and agrimoniin content (AGN) were evaluated; and the optimal UVA dose, storage time, and temperature were determined. In vitro bioaccessibility of the accumulated phenolic compound was studied on RF tissue treated with UVA at optimal process conditions. The digested extracts were tested for antiproliferative activity in colorectal cancer cells, cellular antioxidant capacity, and anti-inflammatory activity. The results showed that applying UVA-HIGH (86.4 KJ/m2) treatment and storing the tissue for 46 h at 15°C increased PAL activity (260%), phenolic content (240%), and AGN (300%). The biofortification process improves the bioaccessibility of the main phenolic compound of RF by 9.8 to 25%. The digested optimum extract showed an IC50 for HT29 and Caco-2 cells of 2.73 and 5.43 μg/mL, respectively, and presented 60% cellular antioxidant capacity and 30% inhibition of NOX production. The RF treated with UVA is an excellent source of phenolic compounds; specifically, ellagitannins and the UVA radiation proved to be efficient in biofortify RF, significantly improving the phenolic compounds content and their bioactive properties with adequate bioaccessibility, adding value to the strawberry agro-industrial by-products.
