Abstract

Abstract The density and viscosity measurements have been performed for the ternary ( dl -alanine/+ d (−)-fructose + water) system at T = 293.15, 298.15, 303.15, 308.15, 313.15 K and ambient pressure. By using the obtained experimental densities, the apparent molar volume, limiting partial molar volumes, limiting apparent molar volume of transfer, limiting apparent molar expansibility and hydration number are calculated for dl -alanine in the aqueous d (−)-fructose solution. Redlich-Mayer type equation has been applied for correlating the apparent molar volume values in dilute region. The obtained viscosity data in the whole concentration range were correlated to the Jones-Dole semi-empirical equation. The viscosity B-coefficients were obtained by fitting viscosity data to Jones-Dole equation. It is well established that the viscosity B-coefficient is a measure of solute–solvent interactions, and is directly dependent on the size, shape and charge of the solute molecules. With helping the obtained results from the volumetric and viscometric measurements, we are able to describe the nature of possible interactions in the studied ternary system.
